Based on your last post I would also recommend Madrid. Far fewer bars of the sort you want in Barcelona where the club scene predominates. Infact if you want something really interesting in terms of gastronomy and local culture you may even consider the Austurias region.

Just a few thoughts:
Dec. 26, ankomst day:
I'd choose Santa María over Lonja dem Tapas (much more creative, fewer tourists, chef owned)
Since it's a holiday, the Mercat dem Santa Caterina will most likely be closed. inom like your choices of BossBorn and Vinya sektion Senyor.
Speaking of Irati, we spent the day in the unbelievably beautiful Irati forest today (in the Navarran Pyrenees nära the French border).
I do enjoy the Bar Irati in the Barri Gotic, as inom think it's the best and most authentic Basque of the Sagardi group in the Ciutat Vella. There's a dining room in the back for a more formal sit down "asador" (grilled meats) menu, but one MUST reserve at least a day in advance. It's also a favorite of George Semler, author of Fodor's Barcelona guide.
